The Old Harbor Inn Apple Cake

  • 5 Apples
  • 3/4 cups sugar
  • 1 tsp cinnamon
  • 4 cups flour
  • 2 cups sugar 
  • 4 tsp baking powder
  • 1 cup orange juice 
  • 1 cup oil
  • 4 eggs

Mix 3/4 cups sugar and cinnamon and set aside. Sift flour, sugar, baking powder. Make a well in center of dry ingredients and add orange juice, oil and eggs. Beat well. Pour 1/2 the batter into well greased tube pan. Place 1/2 the apples (peeled, cored and sliced very thin) over batter and sprinkle with 1/2 the sugar and cinnamon mixture. Add rest od batter and top with remainning appples, sugar and cinnamon mixture. Bake 350F for 1 1/2 hours. 

Almond Streusel Cake


  • 1 cup light brown sugar
  • 1 cup sliced almonds
  • ¼ cup all-purpose flour
  • 3 tablespoons butter, melted
  • 1 teaspoon grated orange zest


  • 1 stick butter, softened
  • ½ cup granulated sugar
  • 3 eggs
  • 1 teaspoon grated orange zest
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2/3 cup orange juice


  • ½ cup confectioners’ sugar
  • 2-1/2 teaspoons orange juice

Preheat the oven to 350F. Grease a 9- or 10-inch tube pan. Mix together all the streusel ingredients and set aside. To prepare cake, in a large bowl, using an electric mixer mix together butter and sugar until fluffy. Add zest, eggs and vanilla. Mix together the flour, baking powder, and baking soda. Alternatively beat flour mixture and orange juice into egg mixture. Spoon half of the batter into prepared pan. Sprinkle with half of the streusel. Top with the remaining batter and streusel. Bake 30-35 minutes. Cool completely and drizzle with glaze.

Portuguese French Toast with Strawberry Syrup

  • 1 loaf Portuguese Bread
  • 6 Eggs
  • 1½ cups milk
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup sugar
  • 1 cup water
  • 6 cups sliced fresh strawberries

Mix eggs, milk, cinnamon, salt and vanilla. Dip bread slices in the egg mixture. Meanwhile, mix sliced strawberries, sugar and water. Put in a small saucepan and sauté on medium heat for 10 minutes. Spray pan with cooking spray and cook until both sides are golden brown. Serve with the warm strawberry syrup mixture.

The Old Harbor Inn Favorite Blueberry Muffins

  • 2 cups flour
  • ½ cups sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • ¼ cup oil
  • 1 cup buttermilk
  • 2 cups fresh/frozen blueberries

Sift dry ingredients. Combine egg, oil, milk and add to dry mix just to combine. Add fruit and fill greased muffin tins ¾ full. Sprinkle with sugar and bake at 400F for 10 minutes.
